Everything Bagels: Low Carb, Keto, Gluten Free & Grain Free

One of the biggest challenges when changing your way of eating is giving up the things you love. For me, that was carbs. I was a carb addict (still am). I believe that it is in-part contributed to by my hypoglycemia that I’ve struggled with since I was a child. If my sugar was getting low, I would instantly grab something containing carbs to level myself out. My go-to? Bagels. Everything bagels to be exact. I would eat them toasted with cream cheese. Better yet, topped with red sauce, mozzarella cheese, and pepperoni to make mini pizzas. (don’t judge me- lol). 

A Different Way Of Eating

Months ago I decided to make some major dietary changes in an effort to reduce (or remove) health issues I was dealing with. My options were to either change some of my eating habits or take a bag of prescription pills every day. 

The first thing I eliminated from my diet were the sweets. We all know how bad (and addictive) sugar can be. Unfortunately, at that time I did not give up all of the hidden sugars. There are many in bread, sauces, gravy, and more- sugar is everywhere. 

The next to go were my coveted carbs. This one was a toughie. Honestly, I didn’t even know many recipes that didn’t include at least one form of carbs. I mean what homesteader doesn’t love a fresh-baked loaf of bread right out the oven, am I right? 
Cooking without carbs was a huge learning curve, and I’m still learning. 

You Don’t Have To Give Up The Things You Love

Whenever you change your way of eating (WOE), I think it is important to remember that you don’t have to give up the things you love. You just have to make some changes in order to love a healthier way to make them. Take these low carb bagels for instance. They are AH-MAZ-ING, no lie. But do they taste exactly like the store-bought ones? No. 
However, I went so long without anything that resembled bread with my new WOE, when I did finally make these low carb bagels, I honestly thought I heard angels singing in the distance.

Low Carb Everything Bagel Ingredients

    • 2 1/2 Cups Shredded Mozzarella Cheese
    • 3/4 Cup Almond Flour
    • 3/4 Cup Nut Flour
    • 2 oz Cream Cheese
    • 2 Eggs + 1 Egg for egg wash
    • 1 Tbsp Baking Powder
    • Chia Seeds, Sesame Seeds and Sea Salt

Low Carb Everything Bagel Directions

  1. Preheat Oven to 400°
  2. Add mozzarella cheese and cream cheese together and melt in a double boiler or microwave
  3. Mix dry ingredients together (flour and baking powder)
  4. Add 2 eggs to cheese and mix well
  5. Pour flour mixture into the egg and cheese mixture
  6. Knead until all ingredients are thoroughly blended
  7. Divide dough into 8 balls
  8. Roll balls to form a log
  9. Pinch ends together to form a circle and place on baking sheet
  10. Brush bagels with egg wash
  11. Sprinkle tops of bagels with sesame seeds, chia seeds, and sea salt
  12. Bake for 10-14 mins until they turn light brown
  13. Remove from oven and place onto a cooling rack
